Place the 9 cups of Rice Chex cereal in a large mixing bowl. Set aside.
In a microwave-safe bowl, combine 1.5 cups white chocolate chips and 2 tablespoons butter. Microwave in 30-second intervals until smooth.
Stir in lemon zest and juice while warm. Mix well.
Pour lemon mixture over cereal. Fold until evenly coated.
Add powdered sugar and pudding mix to a zip-top bag. Add coated cereal, seal, and shake until fully coated.
Spread on baking sheet to cool for 10 minutes. Break up clumps.
Serve immediately or store in an airtight container.
