Lemon Blueberry Cake Bars
  1. Preheat oven to 180°C (170°C fan). Line an 8” square pan.

  2. In a bowl sieve flour, baking powder, baking soda & salt.

  3. In a separate bowl cream butter & sugar using electric hand mixer until light and fluffy

  4. Add eggs one at a time, mix well. Mix in lemon zest & lemon juice.

  5. Add dry ingredients and milk+ yogurt mixture in wet ingredients in batches, gently fold.

  6. Toss blueberries in a little flour, fold into batter.

  7. Pour into pan, spread evenly.

  8. Bake for 30–40 mins or until a toothpick comes out clean.

  9. Cool, then drizzle with lemon glaze and blue berry sauce. ENJOY!
