Lemon Blueberry Loaf
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

  3. In a separate large bowl, cream together the softened butter and sugar until light and fluffy.

  4. Beat in the eggs, one at a time, then stir in the vanilla extract, lemon zest, and lemon juice.

  5. Mix in the Greek yogurt until well combined.

  6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

  7. Gently fold in the blueberries.

  8. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

  9. Allow the loaf to cool in the pan for 15 minutes before transferring to a wire rack to cool completely.

  10. If desired, garnish with additional lemon zest and powdered sugar before serving.
