Peel, quarter and boil 3 good sized potatoes until very soft
Add in the butter and mash until super smooth
Mix in the flour and baking powder and then knead into a dough
Tip onto a floured surface and roll until about 1cm thick then cut into squares/circles/triangles (these are called farls)
Lightly dust each side of your farls with flour and fry in a pan over medium heat for 3-4 mins on each side until browning
To serve, fry each farl in olive oil until golden and sprinkle with salt then ENJOY!
