Refreshing, Gut-friendly Matcha Chia Lemonade
  1. In a large glass or cup, add 2 tbsp chia seeds and ½ cup of water. Stir well to prevent clumping. Let it sit for 15–20 minutes, stirring once or twice more.

  2. In a small bowl, whisk together matcha powder with ¼ cup hot (but not boiling) water until smooth and frothy. Stir in the honey until dissolved.

  3. In another cup or jar, mix lemon juice, water, and sweetener to your taste. Adjust tartness and sweetness as desired.

  4. Once the chia seeds are hydrated, add in ice and pour the lemonade over the chia seeds and ice.

  5. Slowly pour the matcha on top to create a beautiful two-tone effect.

  6. Stir before drinking or enjoy it layered.
