Heat a drizzle of oil in a non-stick pan.
Add the onion and fry on a medium heat for 5 minutes. Add the chopped garlic for the final minute.
Heat the oven to 190C fan.
In a mixing bowl add the cottage cheese, grated cheddar, breadcrumbs, dried mixed herbs, chopped nuts, chives, fried onion and garlic and beaten egg.
Season with salt and pepper and spend a good minute or two working all the ingredients together with a wooden spoon.
Place them in a lined baking dish approximately 22cm wide and 4cm deep.
Sprinkle grated cheese over the top and bake in the oven for 30-35 minutes.
Remove from the oven and leave to rest for 10 minutes to firm up.
Cut into wedges and serve.
