Heat a large, deep skillet, preferably oven-safe, over medium-high. Drizzle with olive oil. When the oil is hot, add the onion.
When you can smell the onion add tomato paste, Italian seasoning, a dash of red pepper flakes, a pinch of salt, some black pepper, and minced garlic. Stir until tomato paste darkens and you can smell the garlic.
Stir in the dried orzo. Stir for a minute to toast the orzo.
Pour in the chicken broth and marinara sauce, mixing well. Simmer for 10 minutes uncovered until the orzo is tender, stirring occasionally.
Once orzo is tender and most of liquid has evaporated, turn off heat. Cover orzo with mozzarella. Top with pepperoni.
Option 1: Cover with a lid until the cheese melts.
Option 2: If using an oven-safe pan, stick it under the broiler for 2-3 minutes.
Garnish with grated Parmesan, if using, and more red pepper flakes.
