Protein Breaded Chicken Strips (keto, Ketovore, Carnivore, Low Carb)
  1. In a medium bowl combine the pork rind crumbs, gelatin powder, egg white powder and seasonings.

  2. In a separate bowl whisk together the egg and heavy cream.

  3. One at a time, dip each chicken tenderloin into the wet mixture first and then toss in the breading mixture. Continue until all the chicken tenders are breaded.

  4. In a large frying pan heat about 1 cup of bacon grease or other frying fat of your choice on medium heat until it just begins to smoke.

  5. Cook breaded chicken tenders for 2-3 minutes per side in the hot oil. Cook time depends on the thickness of the chicken so always check for doneness.

  6. Remove from the pan to a paper towel lined plate or wire rack. Allow to cool slightly before enjoying with your favorite dipping sauce!
