Dough:
2 sticks softened butter
½c sugar or coconut sugar
Vanilla
Cream together then add
1 ¾c discard
2 ¾ cups flour
½c cornstarch
1tsp salt
Filling:
Combine to a paste
4 tablespoons of melted butter
½ cup of brown sugar
2tbsp flour
1tsp vanilla
3tsp cinnamon
Icing:
Whisk all together
2tbsp melted butter
¼c brown sugar
½ tsp vanilla
⅓c powdered sugar
¼tsp cinnamon
Cream together butter and sugar then whisk in the discard. Add the dry ingredients and mix and knead until the dough comes together. Split into 2 and roll them out to rectangles, place the first one on a parchment lined baking sheet and Fill it with the filling leaving about ½-1in space on the sides. place the top on and crimp with a fork, stab in the centers a few times to allow heat to escape during baking. freeze for about 8 minutes. Preheat oven to 350°. Bake for 17-20 minutes.
Allow to cool and add the icing!
