In a large bowl, combine the ground beef, ground pork, breadcrumbs, egg, Worcestershire sauce, garlic, grated onion, salt, and pepper.
Mix everything together until just combined. Be careful not to overwork the meat mixture.
Form the mixture into 4 equal-sized oval patties.
Cook the Salisbury Steaks:
Heat a large skillet over medium-high heat and add a little oil.
Add the patties to the pan and cook for 4-5 minutes per side, or until they are nicely browned and cooked through (internal temperature should reach 160°F).
Remove the patties from the skillet and set them aside.
Make the Mushroom Gravy:
In the same skillet, add the olive oil and butter. Once the butter has melted, add the sliced mushrooms and cook for about 5 minutes, or until softened and browned.
Add the chopped onion and garlic and cook for an additional 2-3 minutes, until the onion becomes translucent.
Sprinkle the flour over the vegetables and stir to combine, cooking for 1 minute.
Gradually add the beef broth, stirring constantly to avoid lumps. Add the Worcestershire sauce, salt, and pepper. Bring the gravy to a simmer and cook until it thickens, about 5-7 minutes.
