Start by making your batter by placing all ingredients together in a shallow bowl and mixing well. It should turn into a thick batter consistency so adjust the water if needed.
For the coating, place all ingredients into a separate shallow bowl and lightly crush the cornflakes with your hands.
Pat the tofu dry and sprinkle with a bit of flour on both sides. Dip into the batter, fully coating all sides, then use your other hand to place into the crumb mix. Use firm pressure to press the cornflake coating on evenly.
Preheat the oil in a frying pan on medium-high heat.
When the oil is hot add your tofu patties and fry for around 3 minutes on each side.
Drain on kitchen paper and sprinkle with salt to keep crispy.
Toast your buns and layer with sauce first, then your salad of choice. Follow up with that tofu patty, fresh coriander, pickled onions and your top bun with some extra sauce.
