Slice zucchini and onion thinly. Add salt and let it sit for 2 hours to help release all the moisture. Drain.
Add the rest of the ingredients into the squeezed water until u get pancake- like batter. Mix in the thinly sliced vegetables.
Spread onto a baking sheet lightly oiled and bake at 400F for 40-45 min or until crispy.
Cut using scissors. Enjoy
