Lemon & Garlic Chicken Bites
  1. In a small bowl, whisk together the lemon zest, lemon juice, olive oil, minced garlic, oregano, thyme, salt, pepper, and red pepper flakes (if using). Place the chicken pieces in a resealable plastic bag or shallow dish. Pour the marinade over the chicken and seal the bag or cover the dish. Let it marinate in the refrigerator for at least 30 minutes, but up to 2 hours for deeper flavor.

  2. Heat a large skillet or frying pan over medium-high heat. Add a little extra olive oil if needed. Once the pan is hot, add the marinated chicken bites in a single layer. Cook for about 4-5 minutes per side, or until golden brown and fully cooked through (the internal temperature should reach 165°F or 75°C). You may need to cook the chicken in batches to avoid overcrowding the pan.

  3. Once the chicken is cooked, transfer it to a plate and garnish with fresh parsley and lemon wedges. Serve immediately with your favorite side dishes like rice, roasted vegetables, or a light salad.
