Brown the ground beef with the diced onion in a skillet until fully cooked. Drain grease.
Add the beef and onion to the crockpot.
Add potatoes, carrots, celery, beef broth, salt, pepper, garlic powder, onion powder, paprika, and mustard powder. Stir well.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.
Stir in cream cheese and heavy cream. Mix until smooth.
Add shredded cheddar cheese and stir until melted and creamy.
Top with crispy bacon before serving.
