  1. Season chicken with salt & pepper.

  2. Heat olive oil in a skillet over medium‑high heat; sear chicken 3‑4 min per side until golden. Remove and set aside.

  3. In the same skillet, combine pineapple juice, brown sugar, soy sauce, ketchup, garlic, and ginger. Bring to a simmer and reduce for 5 min.

  4. Return chicken to the skillet, coat with sauce, and simmer 10‑12 min until cooked through and sauce thickens.

  5. Meanwhile, prepare rice according to package (or use pre‑cooked). - Serve chicken glazed with sauce over rice, topped with pineapple chunks and parsley.
