Chop up half an onion into a medium dice
Cook ground beef until it gets color on one side, then chop it up into fine bits with a wooden spatula
Add salt and pepper to the beef and cook for a minute or two
Add the diced onion and cook for about 5-6 minutes until the onion softens
Add tomato paste and stir to combine
Add beef better than bouillon and a little bit of water
Simmer the sauce for about 10 minutes
Add heavy cream to the sauce
Cook the heavy cream for another 5-6 minutes
Boil pasta and cook it two-thirds of the way
Finish cooking the pasta in the sauce so it soaks up all the goodness
Finish with Parmigiano Reggiano and a shot of vinegar
Let it sit for about 5 minutes under the heat so the sauce soaks back up
Finish with fresh parsley
Plate up and serve
