Tomato Basil Whipped Cottage Cheese Toast
  1. Prepare the whipped cottage cheese: put the cottage cheese in a food processor fitted with an S blade. Blend for 1-2 minutes until it is smooth, creamy, and with no lumps remaining.

  2. In a small mixing bowl, combined the diced tomatoes, chopped basil, extra virgin olive oil, balsamic vinegar, and salt. Mix together to combine.

  3. Toast up the sourdough bread in your toaster.

  4. Spread a generous dollop or two of the whipped cottage cheese onto each piece of toast.

  5. Pile on a few large spoonfuls of the tomato basil medley on top of each toast.

  6. Add a few twists of freshly cracked black pepper to the toasts and enjoy right away.
