Prepare the whipped cottage cheese: put the cottage cheese in a food processor fitted with an S blade. Blend for 1-2 minutes until it is smooth, creamy, and with no lumps remaining.
In a small mixing bowl, combined the diced tomatoes, chopped basil, extra virgin olive oil, balsamic vinegar, and salt. Mix together to combine.
Toast up the sourdough bread in your toaster.
Spread a generous dollop or two of the whipped cottage cheese onto each piece of toast.
Pile on a few large spoonfuls of the tomato basil medley on top of each toast.
Add a few twists of freshly cracked black pepper to the toasts and enjoy right away.
