For the Steak:
For the Potatoes:
Preheat over to 400F
Poke holes in potatoes with a fork, rub with salt and olive oil, wrap in foil and bake for approx 1 hour, or until fork tender.
While the potatoes bake, mix steak with spices and cook in pan over med-high heat until brown. Set aside.
Once potatoes are ready, slice off top and scoop out filling into a bowl.
Mash the potato filling with butter, cheese and sour cream.
Mix in coriander, garlic, salt, pepper and spices until smooth.
Fill each potato skin with mashed potato mix and top with the steak bites.
Sprinkle with more cheese if desired.
