Heat a drizzle of oil in a large non-stick saucepan. Add the onion and fry for 5 minutes.
Stir in the beef mince and garlic and fry until the beef is browned. Drain off any excess oil.
Add the smoked paprika for the final minute.
Stir in the single cream, milk and sundried tomatoes. Season generously with salt and pepper.
Gently bring to the boil, before stirring in the spinach. Simmer on low for 3-5 minutes, stirring reguarly until the spinach has wilted and the beef is cooked through.
