Pumpkin and feta pasta
  1. Roughly chop the pumpkin, onion and pepper.

  2. Cut off the top of the garlic bulb.

  3. Place everything in a baking dish and put the feta in the middle.

  4. Drizzle with oil, season and roast at 190 °C (fan oven) for approx. 25 minutes until everything is golden brown and soft.

  5. Cook the pasta according to the instructions on the packet.

  6. Place the vegetables (without the garlic skins) in a blender.

  7. Purée finely with vegetable stock, lemon juice and optional yeast flakes.

  8. Adjust the consistency with a little water if necessary.

  9. Season to taste with salt and pepper.

  10. Fold in the rocket and serve.
