Chickpea, Halloumi & Lentil Curry
  1. Fry halloumi until golden, set aside.

  2. In the same pan, sauté onion, garlic, and ginger in oil, then stir in curry paste, cumin, and turmeric.

  3. Add chickpeas, lentils, and coconut milk, simmer until thickened.

  4. Stir in halloumi, season, garnish with coriander, and serve hot.
