Bruschetta Chicken
  1. Brush tops of bread with the EVOO & season w/ pepper. Toast at 400° for 4 min per side on a baking sheet (or in a toaster).

  2. Pound each chicken breast to the same thickness.

  3. Dry chicken with paper towels then season both sides with salt, pepper, oregano, and thyme.

  4. Heat 1 tbsp EVOO in a skillet over medium heat. Add chicken in a single layer.

  5. Cook until golden brown, about 8 min (depending on size). Turn chicken, add mozz slices to top, and cook about 8 minutes longer (may need lid to help melt cheese if you’re using thick slices).

  6. Remove from heat onto plates and top with bruschetta and balsamic glaze. Serve with sourdough toast on the side!
