Whisk together soy sauce, honey, olive oil, garlic, vinegar, ginger, and pepper. Reserve 2-3 tablespoons for basting. Marinate chicken 1+ hours or overnight.
If using wooden skewers, soak in water 30 minutes. Thread chicken onto skewers with small gaps between pieces.
GRILL: Cook at 400°F for 10-12 minutes, turning every 3-4 minutes. OVEN: Bake at 425°F for 18-20 minutes, flipping halfway. AIR FRYER: Cook at 390°F for 12-14 minutes, flipping once.
Brush with reserved marinade during last 2-3 minutes of cooking for extra glaze.
Check internal temperature reaches 165°F. Rest 2-3 minutes.
Garnish with green onions and sesame seeds. Serve with rice and extra sauce.
