Boil the potatoes until tender
Hard boil the eggs
Dice the potatoes and eggs
Chop the red onion finely
Drain the tuna and flake it
Chop the fresh parsley
Combine potatoes, eggs, onion, tuna, and parsley in a bowl
Dress the salad with extra virgin olive oil and sherry vinegar while still hot
Add salt to taste
Chill before serving
