  1. Combine the spinach, ricotta, egg yolk, parmigiano, and 00 flour. Season with salt, pepper, and nutmeg.

  2. Roll the mixture into balls.

  3. Lay the balls on a floured dish and then boil for 3 minutes in salted water.

  4. In a separate pan, cook the butter and sage until it foams.

  5. Add the boiled gnudi to the butter and sage sauce.
