Begin by rinsing the chicken pieces and patting them dry with paper towels.
Sprinkle a pinch of salt and pepper on both sides of the chicken.
In a bowl, mix Dijon mustard, honey, minced garlic, and a dash of olive oil. Coat the chicken generously with this mixture. Cover and refrigerate for at least 30 minutes.
Preheat the oven to 375°F (190°C).
Take the marinated chicken out of the refrigerator and let any excess marinade drip off. Place the chicken in a baking dish.
Generously brush the honey Dijon mixture onto both sides of the chicken.
Place the baking dish in the preheated oven and bake for about 25-30 minutes or until the chicken is fully cooked and has a beautiful golden color.
