Halve the onion and cut into thin strips. Halve the pepper, remove the seeds and cut into 1 cm pieces. Cut the chorizo into 0.5 cm cubes. Fry the vegetables and chorizo in a pan without adding any fat for 5 - 7 minutes. Add half [three quarters | whole] of the tomato paste and "Hello Fiesta" and fry for another minute. Season with salt* and pepper*. Remove from the pan and wipe out the pan. In the meantime, continue with the recipe.
Wash the lime in hot water and grate 1 tsp [1.5 tsp | 2 tsp] of the peel. Quarter the lime. In a small ice bowl, mix the yoghurt, lime peel, juice of 2 [3 | 4] lime quarters, 1 tsp [1.5 tsp | 2 tsp] sugar*, salt* and pepper*.
Heat 0.5 tbsp [0.75 tbsp | 1 tbsp] oil* in each of 2 large pans at medium temperature. Add 1 tortilla to each, top with the chorizo filling and cheese and cover with the 2nd tortilla. Fry the quesadilla for 1 - 2 minutes on each side. Tip: You can use a plate to turn the quesadillas. Repeat with the remaining quesadillas as needed. Cut the quesadilla into pieces as desired and enjoy with the lime yoghurt. Enjoy!
