Grate the firm tofu
Mix up the chia and flaxseeds with the water so they start to form a gel
Mix up everything with all the seasonings so they are well distributed
Add in the tofu and pumpkin seeds and mix in the soy sauce
Add a little drizzle of olive oil if you want it extra crispy (optional)
Place onto a lined baking sheet and bake for 35-40 minutes at 180°C/350°F or until crispy
Eat on its own or sprinkle on salad, beans or soups
