Grilled Chicken Rice Bowl (mediterranean Style)
  1. In a bowl, mix olive oil, lemon juice, garlic, paprika, oregano, cumin, salt, and pepper. Coat the chicken well and let it marinate for at least 20–30 minutes (or overnight for deeper flavor).

  2. Rinse the rice and cook it with water, olive oil, and salt. Once done, fluff with a fork and set aside.

  3. Heat a grill pan or skillet over medium heat. Cook the chicken for about 5–6 minutes per side until fully cooked and slightly charred. Let it rest, then slice.

  4. Whisk together olive oil, lemon juice, Dijon mustard, honey, garlic, salt, and pepper until smooth.

  5. Start with a base of rice. Add sliced grilled chicken, tomatoes, cucumber, red onion, olives, and feta cheese.

  6. Drizzle with dressing and sprinkle fresh herbs on top. Serve immediately.
