  1. Preheat the oven to 350F (180C). Place your chicken on a baking tray and season it with salt and pepper. Then, cover it in olive oil.

  2. Bake the breasts in the oven for 30 minutes until the chicken is fully cooked.

  3. Once the chicken cools down, shred it with a fork.

  4. Add the rest of the ingredients except for sweet gem lettuce leaves into a bowl. Mix in the chicken and combine all the ingredients.

  5. Fill the lettuce leaves with the chicken salad and enjoy it!
