Tah-cheen Baked Persian Chicken And Rice Casserole
  1. Preheat oven to 400

  2. In a large bowl combine yogurt, egg yolks, dissolved saffron, turmeric, garlic, salt, and pepper

  3. Add the cooked rice to the yogurt mixture and mix well

  4. Spray the bottom and edges of a glass Pyrex baking dish

  5. Spoon out a little more than half of the rice mixture evenly across the bottom layer of the baking dish. (Smooth out and pat down until even)

  6. Cut up cooked chicken (or turkey) and season with salt, pepper, and garlic

  7. Layer chicken (or turkey) over the rice mixture

  8. Add remaining rice mixture on as the top layer - add extra saffron if needed, and again smooth out and pat down until even.

  9. Cover pan with tin foil

  10. Bake for 70 to 75 minutes or until the bottom and edges are golden brown

  11. Remove the tin foil from the top of the pan for the last 5 to 10 minutes
