Roasted Carrots
  1. Preheat your oven to 400 degrees.

  2. Cut the tops off of the carrots.

  3. Split the carrots down the middle into similar sizes.

  4. Wash the carrots (no need to peel).

  5. Lay the carrots out on a sheet pan and drizzle with olive oil.

  6. Toss the carrots to ensure they are coated with olive oil.

  7. Pinch the leaves off the fresh thyme and sprinkle over the carrots.

  8. Add a generous sprinkling of salt and pepper.

  9. Arrange the seasoned carrots on the sheet pan.

  10. Roast in the oven for 35-40 minutes until soft and wrinkly.
