  1. Cut the celery and onions, removing the booty part of the onions

  2. Cut the entire bulb of garlic with the skin on

  3. Add the celery, onions, garlic, and carrots to a large pot

  4. Add the thyme, rosemary, sage, peppercorns, and bay leaves

  5. Drizzle with a small amount of oil

  6. Add 12 cups of water

  7. Simmer on low for 1 hour with the lid cracked
