Cut the celery and onions, removing the booty part of the onions
Cut the entire bulb of garlic with the skin on
Add the celery, onions, garlic, and carrots to a large pot
Add the thyme, rosemary, sage, peppercorns, and bay leaves
Drizzle with a small amount of oil
Add 12 cups of water
Simmer on low for 1 hour with the lid cracked
