Rehydrate the 71B yeast in water.
Add the honey, orange zest, and Fermaid O to the water and mix well.
Pitch the rehydrated yeast and allow to ferment.
After fermentation, rack the mead and add the Maraschino cherries and their juices, the Wild Turkey 101 Whiskey, the wine tannin, and the acid blend.
Allow to condition for a period of time.
Sweeten to taste with honey if desired.
