Pumpkin Sourdough Bread
  1. Preheat your oven to 350°F (175°C). Grease and flour a standard loaf pan.

  2. In a large bowl, whisk pumpkin purée, sourdough discard, oil, eggs, and sugar until smooth.

  3. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.

  4. Gently fold the dry ingredients into the wet mixture until just combined. Stir in nuts or chocolate if using.

  5. Pour into a greased loaf pan and bake 50-60 minutes, until a toothpick comes out clean.

  6. Cool before slicing (if you can wait that long).
