Mom's Parmesan and Spinach Orzo
  1. In a large pan, melt butter, and brown orzo (about 2 minutes). Add minced garlic and stir til fragrant.

  2. Add broth, and bring to a boil. cover the pan and reduce heat to a simmer. Simmer for 15 minutes, or until broth is absorbed and orzo is tender. Stir in spinach and allow it to wilt and heat through. Add parmesan and seasonings, stir.

  3. Serve with extra cheese, pesto, veggies, etc.
