Christmas "Kutia"
  1. Pick out all the foreign objects from the wheat. Wash and place in a heavy pot. Add the water and soak overnight.

  2. In the morning, do not drain, but bring the wheat to a boil and skim the scum off the top. Turn to low heat, cover and simmer for 4 to 5 hours or until kernels burst open. Stir occasionally while it is cooking, to prevent sticking.

  3. Wash the poppy seeds well in a fine cloth. Scald and simmer for about 5 minutes. Drain well in a cheese cloth.

  4. Add the poppy seeds to the wheat. Mix the sugar or honey, and salt in the boiling water, and stir into the wheat mixture. Cool, then refrigerate. Add nuts and apples, if used, before serving. This can be served either warm or chilled.

  5. Instead of simmering the wheat on the stove top, it may also be cooked overnight in a slowcooker, on low.
