Pat the drained chickpeas really well with a tea towel to remove all moisture
Let them air-dry while you preheat the oven or air fryer
Mix all seasonings together: nutritional yeast, garlic powder, onion powder, smoked paprika, cayenne, chilli flakes, salt, and black pepper
Toss the dried chickpeas with a drizzle of extra virgin olive oil
Coat the chickpeas with the seasoning mixture
Spread in a single layer on a baking tray (do not overcrowd)
For fan oven: bake at 180°C for approximately 30 minutes
For static oven: bake at 200°C for approximately 30 minutes
Let the chickpeas cool completely - they will crisp up as they cool
