Breakfast Soufflé
  1. Chop roughly the spinach and dice the bell peppers.

  2. Whisk the egg mixture with salt, pepper, cayenne, and chives. Set aside.

  3. Melt butter in a pot, add flour, then milk. Boil until thickened.

  4. Combine a small portion of bechamel with egg mixture, then add to bechamel, and whisk until creamy.

  5. Prep ramekins with oil or butter, place puff pastry square in each.

  6. Top with egg mixture, cheese, bacon, and pepper.

  7. Bake at 385°F for 30-35 minutes until golden and puffed. Serve warm.
