Chickpea Veggie Soup
  1. In a large pot, sauté onion in oil until softened.

  2. Add carrots and celery, cook 2 minutes.

  3. Add potatoes, garlic, thyme; sauté 1 minute.

  4. Pour in water and base (or broth). Simmer 20 minutes.

  5. Stir in chickpeas to warm.

  6. Add parsley, season to taste, and serve hot.
