Duxelles - Mushroom
  1. Melt the butter in a small pan and cook the onion without colour

  2. Add the mushrooms to the onions, lightly season and cook gently until fairly dry

  3. Finish with the chopped parsley

  4. Place in a basin, covered with a buttered paper and reserve in the refrigerator
