Pineapple Cucumber Salad
  1. Slice 1 cucumber and ½ red onion thinly and place in a medium bowl

  2. Drain 1 (8 oz) can Dole® Pineapple Tidbits (reserve 2 Tbsp juice) and save pineapple for layering

  3. In a small bowl, whisk together ¼ cup vinegar, 2 Tbsp pineapple juice, 1 Tbsp soy sauce, 1 Tbsp sugar or honey, ½ tsp chili flakes or chili crisp, ½ salt, and 1 tsp sesame oil (optional)

  4. Pour dressing over cucumber mixture and toss to coat, reserving a little extra

  5. Refrigerate for 30 min. to let flavors mingle, stirring once or twice for even pickling

  6. In a mason jar, layer pineapple tidbits and dressed cucumber mixture, then add any reserved dressing

  7. Top with sesame seeds and green onion before serving
