Turkey & Rice Casserole
  1. Preheat the slow cooker, if necessary, or according to the manufacturer's directions.

  2. Heat the oil in a heavy skillet, add the turkey, and sauté over high heat for 3–4 minutes, until the turkey is lightly browned.

  3. Combine the onion, carrots, celery, mushrooms, and rice in the slow cooker. Arrange the turkey on top, season well with salt and pepper, and pour the stock over. Cover and cook on high for 2 hours.

  4. Stir lightly with a fork to mix, adjust the seasoning to taste, and serve immediately
