Sheet Pan Tofu Fajitas
  1. If you're using Extra Firm Tofu, press the tofu for at least 30 minutes.

  2. Pre-heat the oven to 425 F (218 C).

  3. Wash the bell peppers and cut them into thin strips.

  4. Cut the red onion into similar thin strips.

  5. Mince the garlic cloves.

  6. Once the tofu has been pressed, cut thin strips of tofu.

  7. In a bowl, gently toss the cut veggies and tofu in the vegetable broth.

  8. Add in the seasoning and minced garlic, and gently mix until all of the ingredients are evenly coated.

  9. Spread out all of the seasoned ingredients onto a parchment paper-lined baking sheet.

  10. Bake for 25 - 30 minutes, flipping at the halfway mark.

  11. Serve in tortillas.
