Dressing
For salad, add celery, apple, cucumber, shallot, dates, walnuts, and chopped Parmesan to a large bowl and set aside.
For dressing, whisk finely grated Parmesan, lemon juice, Dijon mustard, olive oil, honey, garlic, salt, and pepper together in a bowl and pour over salad. Toss until well coated. Serve immediately or refrigerate until ready to serve.
