Spicy Beef and Black Bean Casserole

  1. Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.

  2. Add ground beef and cook, breaking it up with a spoon, until browned.  

  3. Stir in red bell pepper, jalapeño, chili powder, cumin, and cayenne pepper. Cook for 2 minutes more.

  4. Add black beans, diced tomatoes, and corn. Bring to a simmer and cook until heated through, about 5 minutes.

  5. Season with salt and pepper to taste.

  6. Divide the mixture evenly among 4 meal prep containers. Garnish with fresh cilantro.

  7. Let the containers cool completely before sealing and freezing.

To reheat:

Thaw the container in the refrigerator overnight.

Microwave on high for 3-5 minutes, or until heated through.
