Process 8oz cottage cheese in a small food processor until smooth to get rid of the curds and transfer to a small oven-safe bowl
Crack 2 eggs into the processed cottage cheese
Add 3 tbsp cacao powder
Stir in 3 to 4 tbsp of powdered monkfruit or preferred sweetener
Add a splash of vanilla extract and mix thoroughly until you have a smooth batter
Sprinkle chocolate chips on top if desired and shake so they somewhat submerge into the cake
Bake at 350°F for 33-35 minutes
Remove from oven and let cool for 2-3 minutes
