Mr. Hong's Eggplant Stir-Fry
  1. Eggplants, peel some skin away and cut to smaller pieces. Add little salt on it and mix for 3min. After 10min, wash with water and squeeze out excess water. Set aside 

  2. Stir fry ginger till aromatic, followed by minced pork. Turn to high heat and fry till oil separated then add eggplants and sauté for 2-3min

  3. Add in garlic, chili pod and bean paste, stir fry till fragrant

  4. Add in oyster sauce, soy sauce and sugar, continue to stir fry

  5. Then add little water and fry for another 2-3min

  6. Add in onion white parts and season with pepper and light soy sauce

  7. Serve and enjoy
