  1. Bring broth to a boil.

  2. Boil chiles, onion, tomato, garlic, cinnamon and peppercorns until soft (15-20 minutes)

  3. While the veggies are boiling, sear the chuck on all four sides in pan with oil

  4. Throw the cooked veggies and chipotles in a blender with a little bit of the broth, blend (with a little bit of the cinnamon bark).

  5. Pour consume over the beef, with the broth to make sure it's submerged

  6. Cook on low for 3 hours or until the beef is tender

  7. Add seasonings now if needed

  8. Serve with corn tortillas, cheese, cilantro, lime, thinly sliced red onion, and sourcream
