Mexican Pinto Beans
  1. Add pinto beans to pot, with water, onion, jalapeno, garlic, smoked hamhock, and chicken bouilion

  2. Bring to boil, set to low and cover. Let it go for an hour and a half (90 minutes)

  3. Cook a whole pack of bacon til crispy. Once cooked, remove bacon and set aside. Discard most of grease, leaving a little to saute some veggies

  4. To the greased pan, add onion, jalapeno, and cilantro. Once thats cooked down a bit add some chopped tomatoes (fresh) and garlic. Cook til jammy

  5. Remove ham hock, pull of meat and skin, cut in chunks. Cut up bacon. Put all meat back in pot with veggies jam, juice of canned jalapenos, half the can of jalapenos, and a big handful of cilantro

  6. Let if go for another 30 minutes

  7. Serve with tortillas
